Dr. Gail Rees is Associate Professor in Human Nutrition and Head of the School of Biomedical Sciences at University of Plymouth. As Programme Lead for BSc Nutrition, Exercise and Health (AfN-accredited), she teaches nutrition research methods, life-cycle nutrition, and public health nutrition. Her research examines nutrient status during pregnancy, obesity interventions, and functional food development.
Rees investigates micronutrient requirements in vulnerable populations, particularly during pregnancy and lactation. Her team employs dietary assessment methodologies to establish relationships between nutritional biomarkers and birth outcomes. Recent work analyzes impacts of food processing on glycemic response and functional bread formulations.
