Fernanda Santos is an Assistant Teaching Professor and Director of Undergraduate Programs for Bioprocessing Science at North Carolina State University's Department of Food, Bioprocessing & Nutrition Sciences. She also co-directs undergraduate programs for Food Science. Her expertise lies in food safety across pre/post-harvest sectors, alternative pathogen control techniques, and food packaging innovations. She actively redesigns courses and pioneered the 'Discovery Series' to engage non-majors in food science topics.
Education: PhD in Poultry Science and Animal Science (North Carolina State University, 2006), BS in Veterinary Medicine (Federal University of Uberlandia, Brazil, 2000).
Research focuses on food safety systems, shelf-life extension via packaging, and undergraduate research mentorship. Teaching includes courses like FS 475 (Design in Food Science), FSA 520 (Pre-Harvest Safety), and FS 553 (Food Laws).
