Eli Wheat

Eli Wheat is a Teaching Professor at the University of Washington's College of the Environment and core faculty in the Food Systems, Nutrition, and Health Program. He co-chairs the Farm Advisory Committee, supports the UW Farm, and operates SkyRoot Farm, a certified organic integrated animal and vegetable farm on South Whidbey Island.

• Ph.D. in Biology, University of Washington (2010)

Research & Teaching: Eli specializes in regenerative food production systems, focusing on sustainable agriculture, urban food systems, and climate-resilient farming practices. His work bridges academic teaching with hands-on sustainable food production.

Eli teaches courses including ENVIR 100: Introduction to Environmental Studies, ENVIR 240: The Urban Farm, ENVIR 389: Agriculture and Urban Food Systems Seminar, and ENVIR 439: Attaining a Sustainable Society. He contributes to UW's sustainability initiatives through educational programs and farm partnerships.
