CRISTINA ASUNCION FENTE SAMPAYO

Cristina Asuncion Fente Sampayo is a full-time university professor at the Faculty of Sciences, University of Santiago de Compostela (USC), affiliated with the Department of Analytical Chemistry, Nutrition and Bromatology. She contributes to research through her involvement in the Strategic Grouping in Sustainable Management and Production of Bioresources (BioReDes) and leads the LHICA-USC research group focused on Food Hygiene, Inspection and Control.

• Doctorate in Sciences from University of Santiago de Compostela (1994)

Her research focuses on food safety, particularly mycotoxin contamination in dairy products. She applies analytical chemistry techniques to study fungal contamination in traditional foods like Galician soft cheeses, contributing to bromatological quality control and sustainable food production practices.
