About
Dr. Brett Taubman is a Professor in the Department of Chemistry at Appalachian State University, where he joined the faculty in 2007. He serves as Director of the Fermentation Sciences program and teaches analytical, brewing, and introductory chemistry courses while leading Ivory Tower, Inc.—a 501(c)(3) non-profit advancing fermentation research and education.
His educational background includes:
- Ph.D. Chemistry, The University of Maryland (College Park, MD), 2004
- B.S. Chemistry, Montana State University (Bozeman, MT)
- B.S. Finance, Penn State University (Centre County, PA)
Research centers on hop terpene profiling, hemp cannabinoid analysis, gluten-free brewing, and koji fermentation chemistry. He developed ASU's pilot instructional brewing facility to investigate $$ ext{C}_{10} ext{H}_{16}$$ (terpenes) and $$ ext{C}_{21} ext{H}_{30} ext{O}_2$$ (cannabinoids) in varietals, bridging analytical chemistry with practical brewing applications.
His publication trends reveal focus on microbiological solutions for brewing challenges, particularly microbial gluten reduction using lactic acid bacteria to address food safety and accessibility in beer production.
Dr. Taubman secured $15,241 as PI for Muscadine Chemical Analysis (NC Department of Agriculture, 2021–2022) and serves as Senior Personnel on a $100,000.50 USDA NIFA grant promoting STEM careers through fermentation science for underrepresented youth (2021–2024).
He established ASU's pilot brewing facility and co-developed the Fermentation Sciences degree program, driving innovation through Ivory Tower, Inc.—which supports cross-disciplinary research in $$ ext{H}_2 ext{O}$$-based fermentation systems and sustainable brewing practices.
