Her research focuses on gut microbiota dynamics, microbial interactions in fermented foods, and the role of vitamins in human and animal health. Key areas include folate and B12 metabolism, probiotic applications, and food innovation through microbial biodiversity.
Publications highlight in vitro fermentation studies, microbial community analysis, and functional impacts of dietary components on microbiota. Notable works explore the metabolic roles of gut bacteria in vitamin production and detoxification processes. Dr. Greppi collaborates on projects addressing global nutrition challenges, such as African micronutrient deficiencies via biofortification.
