Andreas Nicolai serves as Professor of Food Product Technology within the School of Energy and Life Science at Flensburg University of Applied Sciences. He teaches Biotechnology Process Engineering and Applied Biotechnology and Food Science in the Biotechnology and Food Technology program, providing academic advisory services to students.
His research focuses on sustainable food systems, particularly through the PRECISE project developing intelligent solutions for sustainable meat production and consumption. He actively addresses EU organic food regulations (VO (EU) 2018/848), novel food innovation (including algae and insect-based products), and food labeling systems. His work bridges industrial-scale food technology applications with sustainability initiatives.
Nicolai co-organizes the annual Flensburg Food & Biotech Symposium and is affiliated with the university's FoodLab practical laboratory established in May 2025. He contributes to university-wide efforts in reducing food waste and advancing food safety standards, including analysis of traffic light labeling systems for consumer guidance.
